DON'T LET IT FREEZE!

Here is an example of what happens to a carcass when you let it freeze. When it thaws to cut it has a quarter inch of dead tissue all around the entire animal, so the butcher has to cut all the green damaged tissue off your animal. The first thing this customer will say is, " Where's all my meat? I brought in a 160 lb hog ", well you get my drift; so don't blame the butcher for stealing your meat. He doesn't need rotten meat lol. DONT LET IT FREEZE!
